How To Make Buko-Pandan Ice Candy
Buko-Pandan is a popular flavor combination in the Philippines. It’s a combination of buko (young white coconut) and pandan (green fragrant screwpine leaves).
Here’s how to make the ubiquitous Filipino summer treat called ice candy — with the flavor of buko pandan! 🙂
1 sachet of buko-pandan gulaman
8 cups water
1¾ cup sugar
2 pcs young coconut (scrape into strips)
4 cups buko juice
4 tbsp cassava starch
1 cup sugar
1 can condensed milk
3 cups fresh milk
2 tsp buko pandan flavor (optional)
1. Dissolve the buko-gulaman gulaman powder in 8 cups of water. Add 1 cup of sugar. Heat with constant stirring until boiling. Pour into molder until set. Slice into small cubes or scrape into strips. Set aside.
2. Combine the cassava starch and buko juice. Heat the mixture until it starts to boil and thicken. Add ¾ cup sugar. Let the mixture cool before adding condensed milk, fresh milk, and buko pandan flavor. Add buko strips and small cubes of the buko-pandan gulaman.
3. Using funnel, pour the mixture into ice-candy plastic or ice candy molder. Freeze.
