Arroz Caldo Con Pollo (Recipe)
What the Spanish call Arroz Caldoso Con Pollo, Filipinos call Arroz Caldo Con Pollo, or simply Arroz Caldo. It’s a fancy version of the local Chinese-Filipino favorite lugaw.
Here is a Filipino recipe for Rice Chicken Soup.
3 tablespoons vegetable oil
2 tablespoons garlic, minced
¼ cup onion, chopped
8 ½-inch slices ginger
1 chicken (2-3½ pounds)
cut in serving pieces
4 tablespoons fish sauce (or 2 tablespoons salt)
6 cups water
2 cups uncooked rice
¼ cup scallion, chopped
¼ teaspoon pepper, freshly ground
1. In a large covered stockpot, heat oil and sauté garlic, onion, and ginger until garlic is golden and the onions transparent.
2. Add chicken and fish sauce (or salt). Cover and simmer 5 minutes.
3. Add water and rice, stirring often to prevent sticking. Simmer 25 minutes over low heat, stirring often, until chicken and
rice are tender.
4. Add chopped scallions and pepper before serving.
